Bubbles For Boobies
Brut

Sparkling Wine, North Coast

Vintage: non-vintage
Varietals: 60% Chardonnay from Mendocino, 40% Pinot Noir form Carneros
PH: 3.21
Alcohol: 12.5
En Tirage: 9 months

Methode Champenoise: This process involves many specialized steps in both viticulture and the winemaking and has taken centuries to evolve. After primary fermentation and bottling, a second alcoholic fermentation is induced in bottle which results in creating the bubbles which give these wines their sparkle and liveliness. This secondary fermentation is induced by adding grams of yeast along with rock sugar. At the same time the bottle is capped with what is known as a crown cap. After aging, the bottle is manipulated, in a process called remuage, so that the lees settle into the neck of the bottle. The neck is then frozen and the crown cap is removed. The pressure in the bottle forces out the ice containing the lees and the bottle is then quickly corked to maintain the bubbles in the wine. This process is called degorgement. Our 2010 Brut matured en tirage for a 9 months.

Tasting Notes at release date: Citrus, Pear, and floral aroma. The fine mousse brings forth the light citrus- smooth and round in the mouth. Finish is crisp with a note of grapefruit.

2007 Transition Blanc de Noirs
Sparkling Wine, Carneros

Vintage: 2007
Varietal: 92% Pinot Noir, 8% Chardonnay
Source: Carneros
PH: 3.21
Alcohol: 12.5
En Tirage: 32

Our 2007 Blanc de Noirs shows great complexity as it was en tirage for a full 30 months meaning stored on its side in cellar during the critical secondary fermentation.

Tasting Notes at release date: With pleasing aromas of strawberries, raspberries, and honey, this Blanc de Noirs has a bright crispness that complements its delicate flavors of strawberry, cherry, and green apple. The bubbles are refined and maintained in a lasting manner which speaks of the precisely done second fermentation and the extended time en tirage. This sparkling wine is definitely a celebratory choice to make any occasion special.

What is Bubbles for Boobies?

As one of the partners of J. Keverson Winery, our task was to find a name for our ’07 sparkling wine. For several reasons we gravitated to “Transition.” That name can mean many things for different people. For us, being new empty-nesters, the name was perfect. Our youngest child was off to college and we were certainly in a time of transition. During our label design stage one of our sisters-in-law experienced the pain of losing her younger sister to breast cancer. Such a devastating disease should not
happen to any woman and her family. After reflecting on how many women we knew that have been diagnosed with breast cancer, we decided to make
our label pink and to give the profits from the sale of each bottle to The Breast Cancer Society.

A friend of ours suggested “Bubbles for Boobies” as way of letting customers know of our donation efforts and our
hope that others will learn about this foundation’s programs. So, to pass on the word we had tee shirts made with the slogan Bubbles for Boobies and will donate the profit from the sales to breast cancer research and education.
